this is a quick and easy recipe ... very tasty, cheap, nutritious, throw it together in under 10 minutes ...

4 cups cooked brown rice
2 roma tomatoes, diced
1 can black beans, well rinsed and drained
one large avocado, diced
1/2 large fire-roasted red bell pepper, diced (the jarred kind is a-okay)
1/2 cup chopped cilantro plus some for garnish
cilantro dressing* to taste

combine all ingredients, chill well, serve cold

but if you wanted to make the dressing yourself from scratch:

1/2 cup mayonnaise
1/2 cup sour cream
1/4 teaspoon white pepper
1 garlic clove, pressed
2 tablespoons minced fresh cilantro
1 tablespoon minced jalapeno
2 ounces crumbled Cotija cheese

blend all ingredients well, chill
