Brown Sugar Pound Cake

1 cup shortening 250 mL
1/4 lb margarine 115 g
1 lb light brown sugar (sifted) 450 g
5 eggs 5
3 cups all purpose flour 725 mL
1/2 tsp salt 2 mL
1 tsp baking powder 5 mL
1 cup evaporated milk 250 mL
2 tsp maple extract 10 mL

Cream shortening, margarine and brown sugar.

Add eggs one at a time, beating well after each addition. Sift dry ingredients and add alternately with milk. Add maple extract.

Pour mixture into a greased and floured tube pan and bake in a 300°F/150°C oven for 1-1/4 to 1-1/2 hours.

When partially cool, cover with frosting.
