4 ounces Marzipan
Simple Syrup, as needed
Liquid food coloring, as needed
Cocoa butter, as needed
Royal Icing, as needed
Melted chocolate, as needed

1. For the body, roll 2.5 ounces (75 grams) of the marzipan into a ball. Form an oval shape with two blunt ends by rolling the dough between gloved palms. Curve the dough so that the extensions form the hind legs. Cut the legs to form the hooves.

2. Roll 1.5 ounces (45 grams) marzipan into a pear shape. Flatten the narrow end of the pear shape on the work surface to create a pig snout. Indent two holes for the nose and make a small cut for the mouth. Make indentions for the eyes. Attach the head to the body with a small amount of Simple Syrup.

3. For the ears, divide 0.3 ounces (10 grams) of the marzipan in half. Roll each piece of the marzipan into a small ball then taper the marzipan into a cone 1-inch (2.5-centimeters) in length. Flatten the cones slightly then attach them to the head, bending the tips down towards the eyes.

4. For the tail, roll a small amount of marzipan into a thin rope, tapered slightly at the end. Curl and attach it to the body.

5. For the front legs, divide 0.3 ounces (10 grams) of the marzipan into two equal pieces. Roll each piece into tubes 0.5-inch (1.2-centimeters) long. Indent one end of each rope with a knife or marzipan tool to indicate the hooves. Attach the marzipan to each side of the figure to form the front legs.

6. Airbrush details onto the pig with red food color. Spray the finished figure with cocoa butter. Fill a pastry bag with a small plain tip with royal icing. Fill the indentations for the eyes with royal icing. Use a toothpick dipped in melted chocolate to add details to the eyes.

7. Place the finished marzipan pig on a chocolate cut-out.
