Preparation Time: 10 minutes
Baking Time: 35-40 minutes
Chilling Time: 3 hours


1 - (one) 9" graham cracker crust
1 - (one) 8 oz. package cream cheese, softened
1/2 cup - (one half cup) sugar
1 tablespoon - (One Tablespoon) lemon juice
1/4 teaspoon - (one fourth teaspoon) vanilla
dash of salt
2 - (two) eggs
topping (recipe follows)
fresh fruit or
fruit topping (optional)


Preheat oven to 325 F. In bowl, combine cream cheese, sugar, lemon juice, vanilla and salt. Mix until well blended. Add eggs, one at a time, mixing well after each addition. Place crust on baking sheet; pour in filling. Bake for 25 to 30 minutes or until inserted knife comes out clean. Don't do the topping until you have baked it for 25 to 30 minutes...Now get a little bowl out and mix up the topping...Topping: Combine 1 cup sour cream, 2 Tablespoons sugar and 1/4 teaspoon vanilla. Carefully spread this topping over that hot pie!!! Yes...do it...Hahaha...I was very reluctant at first but do it...This is truly the best cheesecake I've ever had...Anyway...Then continue baking 10 minutes; cool. Chill 3 hours. Top with fresh fruit or canned fruit filling.
