Ingredients:

2 cups Whole Wheat pastry flour

2 cups oats

2 tsp baking powder

1/2 tsp salt

3/4 cup coconut oil

3/4 all natural peanut butter

1 cup granulated sugar

1 cup brown sugar

1/2 cup plain soy milk blended with 2 tsp flax meal

2 tsp vanilla extract

3/4 cup chocolate chips

Instructions:

Preheat oven to 350°F. Grease two cookie sheets.

Mix the flour, oats, baking powder, and salt in a large mixing bowl.

In a separate bowl mix the coconut oil (you may have to soften slightly) , peanut butter, sugars, soy milk-flax mixture, and vanilla.

Add the wet ingredients to the dry and mix until combined. Add chocolate chips.

The dough will be very mushy and soft.

Shape cookies in your hands - roll each into a smaller than walnut-sized ball.

Place on tray with about an 1/2 inch in between cookies.

Bake for 8 - 12 minutes or until cookies are slightly puffed and lightly brown. Allow the cookies 10 minutes to cool before removing them from the cookie sheet.

If you don't wait the cookies will crumble.

Makes 35ish small ball cookies.
