1 Lemon - Sliced Into Rounds
2 Tbsp Dill
2 Tbsp Garlic Powder
4 Flakes Fresh Garlic - Chopped
2 Shallots - Minced
1/2 Cup Dry White Wine
1/2 Cup Water
4 Skinless Salmon Fillets (About 1" Thick)
Salt - Optional
Pepper - To Taste
1 Tbsp Extra Virgin Olive Oil
2 Tbsp Lemon Juice

METHOD: (Serves 4)

1. Rinse and marinate the Salmon Fillets with 2 Tbsp lemon juice, sprinkle garlic powder generously all over the fillets covering them, lightly sprinkle pepper, and little salt if desired.
2. Arrange the lemon slices in a single row over the bottom of a large skillet (12 inch skillet).
3. Scatter the dill, fresh garlic and the shallots over the lemon.
4. Set the pan on medium-high heat and add the wine and water.
5. Lay the Salmon Fillets, skinned side down on top of the lemons.
6. When simmering, reduce the heat to low, cover and cook/poach until the fish flakes apart easily when prodded with a knife, about 10-12 minutes.
7. Discard the lemon slices, individually set the Poached Garlic Salmon on 4 plates, sprinkle some dill over the fish and serve with a warm vinaigrette dressing or tartar sauce, along with steamed vegetables.
