Grease a piece of foil on a cookie sheet with foil.

In a large heavy pot, stir together 1 cup buttermilk, 2 cups of white sugar, and 1 teaspoon baking soda. Place over a low to medium heat and stir constantly until at the soft ball stage. (Today, my thermometer read 239.4 degrees Fahrenheit.)

Quickly stir in 1 teaspoon of real vanilla, 1 tablespoon of real butter, and 2 cups of pecans. Place in patties on the greased aluminum foil and let cool completely. (If the mixture gets too thick to patty up, reheat for a few moments.)

Keep in an air tight container. Not sure how long they last, because they will go fast!
