I am a huge fan of Serrano's Restaurant in Austin, Texas. They have blended Tex-Mex with Southwestern Mexican Food. My favorite is the cheese enchiladas. Instead of the chili sauce on top, I request the chipoltle sauce. I asked them what type they used, and they said they made it homemade with about 10 ingredients. It has a firey taste after chewing with the enchiladas, but not enough to want to drink cold water. Medium hot. If you have the recipe for the cheese enchiladas covered in chipolte sauce I would definitely make them. Thannnnnnk you.
