Whipped Turnip Casserole

3 lbs. fresh yellow turnip
1/4 cup butter or margarine
1 1/2 tbsp. brown sugar
1 1/2 tsp. salt
Dash of pepper
3 eggs
1 cup soft bread crumbs
1 1/2 tsp. lemon juice

Wash turnip, pare and cut into 1/2" slices. Cook covered in large pot in small amount of boiling salted water until tender (about 20-25 minutes). Drain thoroughly. Mash while still very hot. Add butter, sugar, salt, and pepper. Beat with an electric mixer until blended. Add eggs, one at a time and continue beating until soft and fluffy. Stir in bread crumbs and lemon juice. Pour into 1 1/2 quart casserole.
If preparing ahead, cool and chill covered until next day.
Sprinkle lightly with paprika.

To bake, place in 375F oven, uncovered, for 50 minutes.
