PAN-FRIED CRAB CAKES WITH BELL PEPPER BUTTER SAUCE
Crabcakes:
1 extra large egg, beaten
1 T mayonnaise
1/4 t curry powder
3-4 drops hot pepper sauce
1 t Worcestershire sauce
1 T lemon juice
1/8 t ground cloves
1/8 t cayenne pepper
1/2 t paprika
1/4 t dry mustard
salt & pepper
1 lb. fresh lump...
2 cups crab meat
2 cups panko (Japanese bread crumbs)
1 cup lemon grass mayonnaise (recipe follows)
4 green onions, chopped fine
2 tablespoons basil, chopped fine
2 tablespoons cilantro, chopped fine
2 tablespoons mint, chopped fine
fish sauce, to taste
mixed baby greens, as needed to garnish...
1 pound blue crab meat
6 fluid ounces heavy cream
2 ounces red bell pepper, small dice
2 ounces green bell pepper, small dice
clarified butter, as needed
1 bunch green onions, sliced
6 ounces fresh bread crumbs
salt and pepper, to taste
1 tablespoon dijon mustard
worcestershire sauce, to taste...
2 tablespoons Hot NAMIDA Wasabi paste
1 avocado, peeled, seeded and puréed
3 tablespoons apple cider vinegar
Pinch salt
Pinch sugar
Pinch black pepper

Combine all ingredients well and chill.
