Recipe Feeder
2 cups sifted confectioners' sugar
2 tablespoons plus 1 teaspoon water
1/4 teaspoon mint extract
2 or 3 drops green food coloring
1. Combine the sugar, water, and
extract in top of a double boiler.
Add food coloring, a drop at a
time, stirring until mixture is a
delicate green.
2. Place over simmering water
about 3 minutes, or until mixture is
creamy and will pour from spoon.
3. Drop mixture from end of teaspoon
onto waxed paper, forming 3/4 to 1 inch
round patties. When mixture in double
boiler begins to crystallize, thin out
with just enough hot water (about 1/2
teaspoon) to make creamy enough to
pour from spoon again. (It may be
necessary to repeat this procedure
several times before all the patties
are formed.)
4. When patties are firm and cool,
lift from waxed paper with a spatula.
Store in covered container in a cool,
dry place.
Note: If desired, half-fill miniature
bonbon cups with the candy mixture and
set aside until firm. Serve in or out of
the paper cups in a candy dish.
Makes about 4 dozen small patties.
