Preheat oven to 425F.
Prepare pastry: roll out half and line a 9" pie plate. Trim. Flute edge but do not prick.
One 9" pie.
Combine:
1/4 cup pre-sifted Monarch soft wheat flour
1 cup granulated sugar
1 1/3 cups lightly packed brown sugar
1/2 tsp. salt
Beat until thick and lemony:
4 eggs
Gradually add dry ingredients, beat until smooth.
Stir in:
1/2 cup melted butter or margarine
1/2 cup milk
1 tbsp. vanilla
Turn into prepared pie shell. Place on bottom shelf of oven.
Bake in preheated 425F oven for 15 minutes, or until pastry is golden. Reduce heat to 350F and continue baking until set, about 25 to 30 minutes longer.
