Golden Pastry
2 small cloves garlic, minced
2 medium onions, minced
8 thin slices Swiss cheese
8 small tomatoes, sliced
Flour
24 anchovies cut up
Capers
2 cups whipping cream
Heat oven to 400F. Prepare pastry. Mix garlic and onions; spread in pastry-lined tart pans. Cover with cheese slices. Dip tomatoes into flour; place on cheese. Sprinkle with anchovies and capers. Pour cream over pies.
Cover edges of pastry with 1 1/2" strips of aluminum foil to prevent excessive browning; remove foil last 15 minutes of baking. Bake 25 to 30 minutes.
