Recipe Feeder
Filling:
1/2 lb. lean ground beef, browned & crumbled
1/2 can black beans, drained but not rinsed
salt to taste
ground red pepper to taste (not cayenne)
10" flour tortillas
grated sharp cheddar cheese

Garnish with:
sour cream
shredded lettuce
diced tomato
picante sauce or salsa of choice

Combine first four ingredients & mash up the beans with a fork if you like (or not).

Roll up about 1/2 cup of this filling in a white flour tortilla (I use high-fiber low-carb ones). Add a handful of grated cheddar cheese - either inside or outside. (DH would rather have his cheese melted on the outside of the burrito, but I like mine inside). Pop it in the microwave for a few seconds to melt the cheese.

Top the burrito with guacamole & sour cream, and finally top with shredded lettuce & diced tomato. DH adds a lot of picante to his, but I take mine without.

This is so filling it only takes one burrito to fill us up, but then this whole recipe only made two burritos tonight, so good thing we didn't have last minute company, eh?! :D
