Of all food, sprouts contained the highest amount of living enzymes. for optimal nutrition, eat some everyday.if u prefer to use your favourite dressing with this salad,eliminate the liquid aminos and the oil.if u would like it to be a more substantial meal, toss in a handful of pumpkin seeds.use three or four different sprouts in this salad.try mung,adzuki,lentil,radish,sunflower,buckwheat,clov er or pea

ingredients:
1 cup buckwheat sprouts
1 cup sunflower sprouts
1 cup radish sprouts
1 cup mung sprouts
1/2 cup diced cucumber or zucchini
1/2 cup chopped scallions
1/2 cup diced red pepper
2 tablespoons chopped parsley
2 tablespoons liquid aminos or tamari
1-2 tablespoons cold-pressed,extra virgin olive oil(optional)

In a large bowl,combine the sunflower sprouts,buckwheat sprouts, radish sprouts, mung sprouts, cucumber, scallions, red pepper, and parsley. toss together. pour the liquid aminos and olive oil over the salad and toss again.serve on bed of baby greens.serves 4
