24 oz butter - clarified, warm

2 oz lemon juice
s&p
p. cayenne

3=Sabayon the yolks with the white wine whisking continuosly until ribboned, whisk in butter. Add a teaspoon of warm water and half the lemon juice in the process as mix thickens. Finish with rest of ingredients.
