Tropical Quinoa - from Wegmans

Prep 15 min Cook 25 min Serves 6

2 cups water
1 cup quinoa
2 tsp extra virgin olive oil
3/4 tsp salt
1/8 tsp black pepper
1 14 oz can Nature Forest Mango
1/2 red pepper, finely diced
2 scallions, thinly sliced
2 tbsp chopped fresh cilantro
1 tbsp rice wine vinegar
1/2 tsp grated orange zest
1 15 oz can Westbrae black beans

1. Bring the water, quinoa, oil, salt and black pepper to a boil in a small saucepan. Reduce the heat and simmer, covered, until tender, about 20 minutes. Drain.

2. Fluff the quinoa with a fork, transfer to a large bowl, stir in the remaining ingredients.
