2 eggplant - cut into 0.5 inch slices

=Lightly salt eggplant, allow to stand at least 10 minutes. Pat dry.
Toss with olive oil and a scant amount of vinegar. Add herbs, salt and pepper to taste.
Grill or bake in a hot (450F) oven till just brown
