1/2 cup onion, diced
1 tablespoon olive oil
1/2 cup quinoa
1 cup water or vegetable stock
kosher salt and pepper, to taste
Yield: 1 cup
1. In a small saucepot, sauté the onions in the olive oil over medium heat.

2. Add the quinoa and allow it to brown slightly.

3. Add the water or stock and season with salt and pepper. Bring to a full simmer.

4. Remove from the stove and cover the pot. Allow the quinoa to steep until tender, approximately 8 minutes.
