Not sure if this is the best recipe out there, but it's the one I have!
Ingredients:
2 cups of rolled oats
1 cup of plain flour
2 cups of desiccated coconut
1.5 cups of white sugar
250 grams of butter or margarine
2 tablespoons of golden syrup (up to 4 tablespoons could be used)
1 teaspoon of baking soda
2 tablespoons of boiling water
Instructions:
1. Preheat oven to 160 degrees Celcius.
2. Lightly grease some oven trays.
3. Add rolled oats, plain flour, desiccated coconut and white sugar to a mixing bowl and mix.
4. Melt butter/margarine and golden syrup in a saucepan, stir while melting. Once melted, remove from heat.
5. Mix baking soda and boiling water in a cup or small bowl. Once mixed, add to the melted butter and golden syrup in the saucepan.
6. Add the saucepan mix to the rolled oats, etc in the mixing bowl and mix well.
7. Once mixed, make balls using approximately a tablespoonful of mixture each and place on tray, around 5 cm (2 inches) apart. Press each ball lightly with a fork to flatten slightly.
8. Bake in the preheated oven for around 20 minutes.
