Artichoke Omelet

3 California Fresh Eggs
Salt and pepper, to taste
1 tablespoon cream
2 artichoke hearts, diced
2 ounces salsa
1/4 cup shredded Jack cheese
Servings: 1
Whisk eggs with salt, pepper and cream. Prepare omelet. Before folding, add artichoke hearts, salsa. and cheese. Fold and serve.


Yield: 1 omelet

Notes: One of their recipe favorites.
