Notes: Swimmers need stamina! A good breakfast the day of exercise improves performance and provides the body with essential fuel.
1 teaspoon olive oil
1/4 cup mushrooms, thinly sliced
4 California Fresh Eggs
2 tablespoons chopped fresh basil
1 small tomato, diced
4 Australian toaster biscuits
Servings: 4
Heat oil in non-stick pan. Add mushrooms and cook until softened. Separately, mix eggs with basil and diced tomatoes. Add to mushrooms in pan and cook over medium heat until eggs are set but still soft. Keep warm while toasting the biscuits. Pile scrambled eggs on toasted biscuits and enjoy.
