1 butternut squash - 2 lb (yield 1.75c.)

4 oz butter
11 oz sugar
2 eggs

2 c flour - self rising
1 tsp cinnamon
0.5 tsp nutmeg
0.5 tsp allspice
0.25 tsp ginger

0.5 c pecans

=Bake squash, covered, with 0.5in water ~1hr till tender(400F). Blanch 2. well, alternately add in 1. & 3., begining & ending with 3. Stir in 4. Bake in b&f 5in x3in loafpan ~1hr. Coll in pan 10mns, turn out.
