1 pound butter, softened
2 cups granulated sugar
7 cups all purpose flour
22 ounces (weight) liquid or frozen whole eggs
OR
12 large California Fresh Eggs
7 teaspoons baking powder
1 teaspoon salt
1 quart buttermilk
2 pounds chocolate chips

1. Preheat oven to 350 degrees F.
2. Grease muffin top pans.
3. Cream butter and sugar together. Add eggs and beat until smooth.
4. Separately mix flour, baking powder and salt.
5. Gradually add dry ingredients and buttermilk and blend well.
6. Fold in chocolate chips.
7. Fill muffin cups with batter.
8. Bake 20-25 minutes.
