Curried Shrimp Pâté

1/3 cup unsalted butter 75 mL
1/3 cup minced onion 75 mL
2 tsp curry powder 10 mL
2 cups cooked shrimp, finely chopped 500 mL
1/4 cup minced green onions 50 mL
1/4 cup sour cream 50 mL
2 tbsp lemon juice 25 mL
salt and freshly ground black pepper

In large skillet, heat 1/3 cup/75 mL butter and cook onion with curry powder over low heat for about 10 minutes. Stir in shrimp, green onions, sour cream, lemon juice, and salt and pepper to taste.

Transfer to crock.
Chef's Note

Mouth-watering pâté to serve with crakers. Will keep for about five days when refrigerated.
