Hazelnut Crunch

4 ounces Milk chocolate
1 1/2 ounces Cocoa butter
1 1/2 ounces Hazelnut paste
2 1/2 ounces Puffed rice cereal
Yield: 9 1/2 ounces
1. Combine the chocolate and the cocoa butter and temper.

2. Add the hazelnut paste and the puffed rice cereal.

3. Sprinkle the chocolate-coated cereal onto petit four or cakes before the chocolate hardens. The mixture may also be spread on a parchment-lined sheet pan and then broken up into tiny pieces once the chocolate hardens.
