Minted Walnut Marble Cake

Preheat oven to 350F
Grease two 8" round layer cake pans. Line bottoms with waxed paper or dust lightly with flour.
1 3/4 cups pre-sifted Monarch soft wheat flour
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 cup shortening
1 cup granulated sugar
2 eggs
1/2 tsp. vanilla
1/4 tsp. peppermint flavoring
1 cup buttermilk or sour milk
1 square unsweetened chocolate, melted
1 tbsp. granulated sugar
1/4 tsp. baking soda
2 tbsp. water
1/2 cup finely chopped walnuts

Sift together flour, baking powder, baking soda and salt.
Cream shortening.
Gradually blend in sugar, eggs, vanilla and peppermint.
Beat until light and fluffy.
Add sifted ingredients to creamed mixture alterately with milk.
Make 3 dry and 2 liquid additions, combining lightly after each.
Blend together chocolate, sugar, baking soda and water.
Pour about 1/3 of batter into a separate bowl and blend in chocolate mixture.
Sprinkle prepared pans with walnuts.
Drop alternate spoonfuls of batter into prepared pans.
Swirl to give marbled effect.
Bake for 30 to 35 minutes, or until cake springs back when touched lightly.
