Prairie Buzzard- (Turkey) Chile Omelet

4 large California Fresh Eggs
Prairie Buzzard- (Turkey) Chili** (see recipe)
1 1/2 ounces sour cream
2 green onions
Servings: 2
Prepare omelet. Add 4 1/2 ounces "Prairie buzzard" (turkey) chili (see recipe). Fold over and slide onto serving plate. Garnish with remaining 1 1/2 ounce chili, sour cream and green onions.


Yield: 2 omelets

Notes: Cowboys had fun too! A day in town might include a couple of games of cowboy pinball while he "painted his tonsils" with a drink of "coffin varnish" (whiskey).

*If using frozen or liquid whole egg product: 7 ounces.
