Pumpkin chip muffins / coffeecake

½ c. Shortening
1 c. Granulated Sugar

2 eggs
1 c. Cooked Pumpkin, pureed
(OK to sub canned pumpkin)

1 2/3 c. Flour
½ t. Baking Soda
½ t. Baking Powder
½ t. Salt

1 c. Cinnamon Chips

Cream shortening and sugar, add eggs and pumpkin, mix well. Combine dry ingredients and stir in. Stir in cinnamon chips. Grease muffin tins or use paper liners for muffins. Or grease/flour 9 X 9 baking dish. Bake @ 350* for 20 – 23 minutes or until tested done w/wooden pick.
