1 1/2 cups ap flour
3/4 cup yellow corn meal
a cup or so milk, more or less
1 egg
2 Tbl melted bacon grease
1 Tbl lemon juice concentrate
1/2 tsp salt
2 heaping Tbl raw sugar
1/2 tsp baking soda
1 tsp Argo baking powder [new, contains no aluminum]
2 heaping Tbl gala apple jam
Mix and stir but not too much, don't overwork.
Spray muffin tins, I used silicone muffin tins, heated the convection oven up before putting in there to 330*, put the dough into the muffin tins and ever so lightly did a few grains of cayenne on top of each. Why? I have no idea, sounded like it'd add a titch of a bite. Baked in convection oven for 7 minutes.
Split open and use a pat of butter on each side. So good, so soft, so flavorful.
