Recipe Feeder
Ingredients to make 6-9 small muffins:
- 90g all purpose flour
- 40g butter or margarine melted
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 75 g white sugar
- 1 egg
- 2 medium ripe bananas
- 1/2 tsp vanilla extract (optional)
- 1/4 tsp cinnamon (optional)
- chopped nuts or chocolate chips (optional)
Preheat oven to 175 C/350 F
Grease a small muffin tin or line with muffin liners.
Mash your bananas, best done with a fork until it resembles a puree.
Add the melted butter, egg, sugar and vanilla and give it a good mix.
Sift the flour, baking powder/soda, salt and cinnamon.
Add to the banana mix and carefully mix by hand! Make sure not to overwork the batter, if you stretch the gluten in the flour it will make the muffins dry!
Add your nuts or chocolate chips if you're using.
Fill the cups 3/4 full and add some nuts or chips on top for a nice touch.
Bake for around 20-25 mins or until toothpick inserted comes out clean.
Remove from the muffin tin and cool on a wire rack or eat straight away!
