Banana Pancakes

Batter for pancakes made from biscuit mix
Extra-ripe bananas
Butter
Maple syrup OR Coconut Syrup (below)

Coconut Syrup:
2 cups coconut
3 cups water
1 1/2 cups sugar
1 tsp. almond extract

Make a pancake batter from biscuit mix using the directions on the package but stir in 1/2 cup smoothly mashed bananas for each cup of mix. (3 medium bananas will make about 1 cup mashed.)
Bake pancakes as usual (because of the banana in the batter, you may need to grease the grill between bakings).
Serve with butter and maple syrup or Coconut Syrup.

Coconut Syrup:
Put coconut through the fine blade of the food chopper.
Combine water, sugar and coconut in saucepan and bring to a boil.
Turn down heat and boil gently until syrupy, about 20 minutes.
Stir in almond extract and serve warm.
