1 1 1/2-pound lobster (650 g)
4 gallons boiling salted water
4 lemon wedges
2 ounces whole butter, melted

1. Drop the lobster into the boiling water. Bring the water back to a boil, reduce to a simmer and cook the lobster until done, approximately 12 minutes.
2. Remove the lobster from the pot, drain and serve immediately with lemon wedges and melted butter on the side.
3. If the lobster is to be eaten cold, drop it in a sink of ice water to stop the cooking process. When cool enough to handle, remove the meat from the shell.
