Brandied Peach Ice Milk

3 cups vanilla ice milk, softened 750 mL
2 tbsp peach brandy 30 mL
1/4 tsp almond extract 1 mL
1 tbsp butter or margarine 15 mL
1 tbsp sugar 15 mL
2 tbsp peach brandy 30 mL
1-1/2 cups frozen sliced peaches, thawed 350 mL
1/4 tsp almond extract 1 mL

Combine ice milk, 2 tbsp brandy, and 1/4 tsp almond extract in a medium bowl, stirring until smooth. Cover and freeze.

Melt butter or margarine in a medium skillet; add sugar, and cook over medium heat until mixture is bubbly. Add 2 tbsp brandy and sliced peaches; cook 3 minutes or until peaches are tender, stirring occasionally. Remove mixture from heat; stir in 1/4 tsp almond extract. Cover and chill.

To serve, scoop 1/2 cup ice milk mixture into individual dessert dishes. Top each serving with 1/4 cup peach sauce.
