Camembert Cashew Appetizer

12 cashew nuts 12
1/4 lb Camembert cheese, at room temperature 115 g
1/4 lb unsalted butter, cut into 6 pieces 115 g
1/4 cup sweet white wine, like Sauternes 60 mL

Toast cashews in a 300°F/150°C oven until nuts are lightly browned.

Place nuts in food processor and grind until fine.

Remove rind from Camembert, and cut into 6 pieces. Add pieces of Camembert, pieces of butter and white wine to nuts in the food processor.

Process, turning machine on and off so that mixture is well blended but does not reach melting stage. Heap in a bowl and chill.

Serve with crackers and raw vegetables.
