3 heaping tbsp. Crisco
2 cups sugar
4 eggs
3 1/2 cups flour
4 tsp. baking powder
1 1/2 cups water
Lemon pie filling

Mix sugar and Crisco well together, add eggs, flour and water alternately a little bit at at time. Add baking powder last. Let it rise about 5 minutes. Put paper forms in muffin pan and fill the forms with 1 heaping tbsp. of batter.

Bake in 350F oven for 12-15 minutes.

Makes about 48 cup cakes.

Carefully scoop round piece from center, fill the cavity with lemon pie filling, cut the scooped piece in half and arrange these two pieces on top of filling to make a flower.
