12 ounces soft tofu, drained
2 tablespoons honey
1 teaspoon almond extract
2 crisp almonds or pecan cookies, crushed
20 pitted dark sweet cherries, halved
6 black cherries with stems for garnish

1. In food processor, process tofu, honey, almond flavoring, and half the cookies.

2. Fold in cherry halves

3. Spoon into paper-lined muffin cups and sprinkle with remaining crumbs.

4. Cover and freeze 2 hours or until firm

5. Soften at room temperature 5-8 minutes before serving. Garnish with whole cherries.

Balance with lower-fat dishes on days you use this recipe.
