Fruit Cake Ring

Preheat oven to 275F
Grease a 9" ring pan and dust lightly with flour.
1 cup chopped dates
1 cup chopped golden figs
1 cup currants
1/2 cup candied cherries, halved
1 cup chopped candied fruit
1 cup coarsely chopped walnuts
1/2 cup flaked coconut
1/2 cup white wine or apple juice

1/4 cup shortening
1/2 cup granulated sugar
2 eggs
1/2 tsp. vanilla
1 cup pre-sifted Monarch soft wheat flour
1/2 tsp. baking powder
1 tsp. salt

Combine first 8 ingredients.
Let stand several hours or overnight.
Cream shortening.
Blend in, beating until light and fluffy, sugar.
Beat in eggs and vanilla.
Stir creamed mixture into moistened fruit.
Sift together and stir in flour, baking powder and salt.
Turn into prepared pan.
Bake for 1 3/4 to 2 hours.
Cool.
