8 fluid ounces Heavy cream
6 fluid ounces Milk
2 ounces Glucose or corn syrup
2 ounces Unsalted butter
14 ounces Milk chocolate
2 drops Orange oil (not extract) (2 - 3)
2 ounces Bittersweet chocolate
Yield: 34 ounces
1. Bring the heavy cream and milk to a boil in a large saucepan. Remove from the heat, then whisk in the glucose or corn syrup and butter.
2. Chop the chocolate into walnut size pieces and place it in a large mixing bowl. Add the orange oil. Pour 1/5 of the boiled cream over the chocolate. Stir with rubber spatula. Add the remaining cream in four increments, stirring well between additions to emulsify the ganache.
3. Yield: 2 lb. 2 oz.
