1/2 cup chopped onion
1 garlic clove, minced
2 tablespoons olive oil
1 green pepper, cut into 1-inch pieces
1 zucchini, sliced
1 small potato, thinly sliced
1 8-ounce can tomatoes
1/2 cup chopped ham
Yield: 2 cups
In fry pan, sauté onion and garlic in olive oil until onion is soft; add green pepper, zucchini, and thinly sliced potato. Cook and stir for a few minutes. Add tomatoes and ham. Cover and simmer for 10 minutes. Serve at room temperature.
