Pork with Kumquats

1 pound Pork, Cubed
2 tablespoon Peanut Oil
1 cup Onion, Chopped
6 Kumquats, Seeded & Grated
¾ cup Water
2 teaspoon Soy Sauce
1 teaspoon Cornstarch
1 teaspoon Lemon Juice
1 tablespoon Honey
1 dash Black Pepper, Freshly Ground

Heat empty wok briefly, add half the peanut oil and heat until hot but not smoking. Add pork and stir fry until no longer pink 3 minutes. Add remaining peanut oil to wok along with onions; stir fry 2 minutes, or until onions are softened but not browned.

Meanwhile, combine water, soy sauce and cornstarch. Add chopped kumquats to onions, return pork to wok and stir in lemon juice and honey. Stir in soy sauce mixture and cook over high heat until pork is completely done and sauce is thickened and bubbly, 3 minutes. Serve immediately over rice.
