2 1/2 cups flour 300 g
2/3 cup wheat germ 100 g
2 tbsp baking powder 30 mL
1 tsp cinnamon 5 mL
1/2 tsp allspice 2 mL
2/3 cup quick cooking oatmeal 60 g
2/3 cup brown sugar 120 g
1/2 tsp salt 2 mL
1 tsp nutmeg 5 mL
1 can pumpkin pie filing (19 oz/560 mL) 1 can
2 eggs 2
2/3 cup milk 160 mL
2/3 cup vegetable oil 160 mL
1/2 cup raisins 75 g
1/2 cup sunflower seeds or chopped nuts 75 g
Combine dry ingredients. In a separate bowl, combine eggs, pumkin, milk and oil. Add pumpkin mixture to dry ingredients, stir to blend. Fold in raisins and seeds or nuts.
Spoon into 24 greased muffin tins (tins will be quite full but muffins will not rise much).
Bake at 375°F/190°C for 20 to 25 minutes.
