Spiced Peach Eggnog

Peach-flavored eggnog with potent spiced rum. A little goes a long way.

3 egg yolks (large), see Note
1/4 cup icing (confectioners') sugar
1/4 cup sweetened powdered peach-flavored drink crystals
1/2 - 1 cup spiced rum
2 cups half and half cream (or milk)
1/4 cup peach schnapps
3 egg whites (large), see Note
Ground nutmeg, sprinkle
Serves 10
Beat egg yolks in medium bowl for about 5 minutes until pale.
Slowly add icing sugar and drink crystals while beating until well combined.
Slowly add rum while beating until drink crystals are dissolved.
Cover.
Chill for at least 1 hour until cold.
Ad half and half cream and peach schnapps.
stir.
Beat egg whites in separate medium bowl with clean beaters until soft peaks form.
Fold fum mixture into egg whites until no white streaks remain.
Makes about 5 1/2 cups.
Pour into 10 chilled small glasses.
Sprinkle each with nutmeg.

Note:
Eggs used in beverages should be cold.
Remove eggs from refrigerator just before adding.
Beverages containing uncooked egg should be served immediately.
