2 tablespoon Peanut Oil
1 small Onion, Chopped
½ teaspoon Curry Powder
¼ teaspoon Cayenne
1 Garlic Clove, Finely Chopped
4 tablespoon Beans, Sliced Diagonally
4 tablespoon Carrot, Shredded
½ cup Shrimp
2 teaspoon Soy Sauce
2 Omelets
2 teaspoon Cilantro, Chopped
Heat oil in skillet or omelet pan over medium heat. Cook onion, curry powder, cayenne and garlic in oil 2 minutes, stirring occasionally. Add green beans and carrot. Cook and stir 2 minutes. Stir in shrimp and soy sauce. Heat until hot. Keep warm. Before folding omelet fill each with about half cup shrimp mixture. Sprinkle with cilantro.
