18 ounces Unsalted butter (1 lb. 2 oz.)
10 ounces Powdered sugar
1/2 fluid ounce Vanilla extract
1 teaspoon Salt
2 teaspoons Almond extract
3 Earl Grey tea bags, single serving size
6 ounces Dried cherries, medium chopped
19 ounces Pastry flour (1 lb. 3 oz.)
Egg wash, as needed
Chopped almonds, as needed
Three Red Fruit Jam, as needed
Yield: 7 Dozen
1. Blend the butter and sugar in a mixer fitted with the paddle attachment. Thoroughly mix in the vanilla extract, salt, almond extract and contents of the tea bags. Add cherries and pastry flour and mix until just combined.
2. Divide the dough in four equal portions about 12 1/2 ounces (375 grams) each. Roll each piece into a 10-inch (25 centimeter) long cylinder. Freeze until hard (approximately 30 minutes).
3. Remove from freezer and lightly brush the dough with egg wash. Roll the dough in chopped almonds and cut into 3/8 inch (1 centimeter) thick slices.
4. Place the cookies on paper-lined sheet pans. Indent the center of each cookie with the back of a spoon and full the indentation with some Three Red Fruit Jam.
5. Bake at 375°F (190°C) until cookies are golden brown, approximately 18 minutes.
