1 1/2 c Whole wheat flour 3 c All-purpose flour
2 tb Brown sugar 1 tb Baking powder
1/2 ts Salt 3 Eggs, beaten
1 c Milk 3 tb Safflower oil
Maple syrup Or butter or margarine
4 servings
Thoroughly mix together the flour, sugar, baking powder and salt. Beat the
eggs, milk and oil. Add to the dry ingredients, beating until well
blended. Grease a griddle or non-stick skillet and cook the pancakes,
turning only once to brown. serve immediately with syrup.
