Chilled Rice Salad

Ingredients
4 cups
Cooked brown or white rice, cooled

1/2 cup
Shredded carrot

1/2 cup
Sliced celery

1/2 cup
Golden or dark raisins

1/4 cup
Chopped green onions

1/2 cup
Apple juice

3 tablespoons
Vegetable oil

2 tablespoons
Distilled white vinegar

1 packet/1 oz.
Hidden Valley® The Original Ranch® Salad Dressing & Seasoning Mix


Preparation
Prep Time: 25 min
Cook Time: 20 min.
Chill Time: 2 hrs. minimum.

Combine rice, carrot, celery, raisins and green onions in a large bowl. Whisk together apple juice, oil, vinegar and seasoning & salad dressing mix in a medium bowl. Pour dressing over rice mixture; toss well to coat all ingredients. Cover and chill at least 2 hours, or overnight. Toss again just before serving.

Makes 4 servings.
