Zucchini Bread

3 eggs
1 c. oil
2 c. sugar
1 t. vanilla
2 1/2 c. zucchini, peeled and grated
3 c. flour
1 T. cinnamon
1 1/2 t. baking powder
1 t. baking soda
1 t. salt
1 c. chopped walnuts

Beat eggs until foamy. Add oil, sugar, vanilla and mix well.
Stir in zucchini. Combine the dry ingredients and mix
well. Fold in nuts. Pour into two greased and floured 9 x 5-
inch loaf pans. Bake at 325° for one hour.
