Applesauce Brownies

4 ounces Unsweetened chocolate
1 pound Cake flour, sifted
9 ounces Cocoa powder
2 teaspoons Salt
12 Egg whites
8 Whole eggs
34 ounces Granulated sugar (2 lb. 2 oz.)
2 pounds Light corn syrup
1 1/2 pints Unsweetened applesauce
7 ounces Canola oil
1 fluid ounce Vanilla
Yield: 8 Dozen
1. Coat a sheet pan with spray pan release.

2. Melt the chocolate over a bain marie and set aside.

3. Sift the flour, cocoa powder and salt together and set aside.

4. Whisk the egg whites and eggs together. Add the sugar, corn syrup, applesauce, oil and vanilla. Whisk in the chocolate.

5. Fold the flour mixture into the egg mixture. Pour into the prepared pan and bake at 350°F (180°C) until a cake tester comes out clean, approximately 25 minutes.

6. Yield: 8 Dozen Squares



Notes: Method: Bar Cookie

This formula offers much of the delicious taste of a great brownie with less fat. The applesauce mimics the fat creating fudginess. This is the formula to use when a healthier alternative to a classic brownie is required.
