2 teaspoons granulated sugar
1/4 ounce dry yeast
14 ounces milk, lukewarm
4 ounces buckwheat flour
3 ounces all-purpose flour
1/2 teaspoon salt
3 tablespoons unsalted butter, melted
2 tablespoons vegetable oil
3 egg yolks
2 egg whites
Servings: 24
1. Stir the sugar and yeast into the warmed milk and let stand until foamy, approximately 5 minutes.
2. Whisk in the flours, salt, butter, oil and egg yolks. Beat until smooth.
3. Cover the batter and allow it to rise in a warm place until doubled, approximately 1 hour.
4. Beat the egg whites to stiff peaks, then fold them into the risen batter.
5. Lightly oil and preheat a large sauté pan. Drop 2 tablespoons (30 milliliters) of batter into the sauté pan, spacing the blini at least 1 inch (2.5 centimeters) apart. Cook until the bottom of each blini is golden, approximately 1 minute. Turn the blini and cook an additional 30 seconds. Remove from the pan and keep warm for service.
6. Blini may be used as a canapé base and is commonly topped with crème fraîche and garnished with caviar.
